Shrimp is the reason I can maintain a pescetarian diet. I’m so in love with it, especially when it’s charred and crispy from the grill!
When I was in Greece a few months ago, this was always my go-to order because I was obsessed with the way they prepared it: Brushed with olive oil, fresh herbs, lemon, and garlic, and finished off on the grill. SO simple but so delicious ☺️
When cooking dinner for my boyfriend’s family, I instantly chose this recipe because it’s easy to make for a big group of people, super healthy, and super quick (most of the cooking time is dedicated to marinating in the fridge).
To complete this Mediterranean dinner, I served the skewers over quinoa tabouli– I really recommend doing the same if you make these. Perfect combo!!
Serves: 4 Time: 50 minutes
- 1 lb shrimp
- 2 lemons, zested and juiced
- 1 tbsp fresh thyme, chopped
- 4 tbsp of parsley or cilantro
- 3 garlic cloves, minced
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
Directions: Combine all of the ingredients in a bowl. Marinade the shrimp in the mixture for 30 minutes.
Also soak wooden skewers in water, so they don’t burn on the grill
Remove shrimp and discard marinade. Put shrimp on skewers. Broil or grill the shrimp until cooked through. 2-3 minutes on each side.
