I’ve always loved Mediterranean ingredients, and my recent trip to Greece made me even more obsessed. I loveee salt, probably an unhealthy amount, which probably explains my affection for feta cheese and olives. YUM. I could probably survive off just those 2 things alone. I always have these ingredients in the fridge + cherry tomatoes (the best snack!) and red onion so this frittata idea came together naturally for me in the kitchen.

Not only is the flavor on point, this meal is also so healthy! And you can save the leftovers and have it for breakfast, lunch, or dinner. I’ve had it for 2 meals in the past 24 hours and will probably again tomorrow….I’m basically a living, breathing Greek frittata and I don’t hate it!! Tastin’ and feelin’ great 👍

Serves: 4     Time: 45 minutes

Ingredients:

  • 8 organic eggs
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup cherry tomatoes; halved
  • 5 large Kalamata olives; chopped
  • 1/2 cup diced red onion
  • 2 tbsp + 1 tsp olive oil
  • 3 oz. low fat feta cheese
  • Optional- basil, parsley, other herbs for topping

Directions: First, preheat the oven to 350 degrees. Once all ingredients are prepped, add onions and a teaspoon of olive oil to a small pan and cook until softened and fragrant (around 3-5 minutes). Set aside.

Next, add 2 tablespoons of olive oil to an 8×8 or 9×9 casserole dish or pan (Anything will work really, but the frittata width and cooking time will vary slightly). Now place the pan in the oven for 5 minutes – this allows the pan + olive oil to heat up so that the fritatta won’t stick to the pan.

Now, whisk together the eggs then add salt + pepper, plus the tomatoes, olives, and onions. Slowly fold and mix in the feta cheese.

Once the pan has heated in the oven for 5 minutes, take it out and pour in the frittata mixture. Put it back in the oven and bake for 25- 30 minutes. It will look done once all the egg appears cooked and fluffy + golden brown around the edges, and when your knife comes out clean! Serve hot and enjoy!
