These muffins are my favorite new find at the moment! They’re flourless, made with only 5 ingredients, have 6 grams of protein, and are 100% good-for-you!!! With qualities like that, you’d probably imagine their taste is not up to standard, but that’s so false. They’re super yummy, especially topped with some jam!! 😍
They’re also SO easy to make and require absolutely no skill in the kitchen- I could make them with my eyes closed. Just throw all the ingredients into a blender, pour the batter into muffin tins, and pop them in the oven for 15 minutes!
I’ve been eating these for breakfast every morning and they are the best on-the-go snack. I’m always rushing around, especially in the morning (I’m not a morning person lol), so these muffins have been keeping my life together. They’re magical!!
Makes 12 muffins Time: 25 minutes
- 3 bananas
- 3 eggs
- 3/4 cup creamy peanut butter
- 3/4 tsp baking powder
- 1 tsp vanilla extract
Directions: First, preheat the oven to 400 degrees.
Add all the ingredients together in a blender and blend until it makes a smooth batter.
Then, pour the batter into a greased muffin tin and bake in the oven for 15 minutes. Enjoy!
