After a long hiatus from cooking due to 6 weeks of travel and 2 weeks of surgery/recovery, I finally got my butt back in the kitchen!!! And it feels so satisfying 😊 Almost as satisfying as eating these cookies and milk for breakfast this morning loll 😝
These cookies are flourless, gluten-free, low-calorie, and made with only 5 ingredients! They’re also naturally super doughy and so so yummy.
Healthy cookies are the best!!!
Makes 18 cookies Time: 25 minutes
- 1 cup peanut butter (can be creamy or crunchy!- I used crunchy)
- 1 egg
- 1/2 tsp baking soda
- 3 tbsp maple syrup
- 1/2 cup dark chocolate chips (I used Enjoy Life vegan chips)
Directions: Preheat the oven to 350 degrees and line a cookie sheet with parchment paper.
In a bowl mix together all ingredients until well combined.
Scoop about a tablespoon amount of batter and roll into a ball, place on the cookie sheet and press with a fork.
Repeat until all the batter is used. Makes about 18 cookies.
Bake for 12-15 minutes.
Let cool completely, then enjoy!

Note: If you use creamy PB, the overall calories and fat will reduce. Give it a go if you want to make these cookies even healthier!
