Makes: 12 muffins Time: 35 minutes
- 8 eggs
- 1 cup diced onion
- 1 cup diced bell pepper
- 1/2 cup shredded monterey jack cheese + 1/4 cup for sprinkling on top
- 2 tbsp milk
- 1/4 tsp salt
- 1/8 tsp pepper
- Optional: additional veggies to add to muffins, hot sauce for topping
Directions: Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper liners.
Beat eggs together in a large bowl. Mix bell pepper, onion, salt, black pepper, and milk into the beaten eggs. Pour egg mixture evenly into prepared muffin cups (fill about 4/5 of the tin).
Bake in the preheated oven until muffins are set in the middle, 18 to 20 minutes.
